You can hide Item Type area globally from Options Panel > Frontend Upload System > Upload Page Settings > Item Types Options -> Enable/Disable
If you want to hide for only one category or categories; Please go to edit that Listing type and change Frontend Form > Item Type Area -> Show/Hide
